Corn Chowder with Bacon Contributed by Tina Vawter of Sheridan, IN
"A chilly-weather family favorite that's one of our comfort foods. Sometimes I'll add a little extra bacon...can't have too much!"
Ingredients: - 8 slices bacon, diced - 1 cup onion, chopped - 4 (14.5 oz) cans chicken broth - 4 cups creamed corn - 4 cups potatoes, peeled and diced - Salt and pepper to taste - Garnish: chopped fresh parsley
Instructions: 1. Cook bacon in a Dutch oven over medium heat until almost crisp. 2. Add onion and cook until tender; drain drippings if desired. 3. Add chicken broth, corn, and potatoes; cover and bring to a boil. 4. Reduce heat to medium-low and simmer for 12-15 minutes, until potatoes are tender. 5. Add salt and pepper to taste, and garnish with parsley. Serves 8.
