"Tender chicken piled high on a soft bun... just like the sandwiches at old-fashioned church socials"
Ingredients: - 4 boneless, skinless chicken breasts - 1 onion, chopped - 10-3/4 oz. can cream of mushroom soup - 4 T. olive oil - 1 c. chicken broth - 2 t. soy sauce - 2 t. Worcestershire sauce - 1/2 c. sherry or chicken broth - salt and pepper to taste - 8 sandwich buns, split - Optional: pickle slices, lettuce leaves
Directions: 1. Heat the olive oil in a skillet over medium-high heat. Brown the chicken for 5 minutes on each side, then place it in a slow cooker and set aside. 2. Add the chopped onion to the skillet and sauté until golden. 3. Add the cream of mushroom soup, chicken broth, soy sauce, Worcestershire sauce, sherry (or additional chicken broth), salt, and pepper to the skillet. Stir well and pour the mixture over the chicken in the slow cooker. 4. Cover the slow cooker and cook on the low setting for 6 to 8 hours. 5. Use a fork to shred the cooked chicken, then spoon it onto the split sandwich buns. 6. Garnish the sandwiches with pickle slices and lettuce leaves, if desired.
This recipe yields 8 delicious and tender shredded chicken sandwiches, just like the ones served at old-fashioned church socials.
