"My family is nuts for Mexican food. So I came up with this recipes that I can make ahead and freeze to have ready anytime our cravings for Mexican food sets in."
Ingredients: - 2 c. cooked chicken, chopped or shredded - 1 c. salsa or picante sauce - 2 c. shredded Cheddar cheese - 4 green onions, chopped - 1-1/2 t. ground cumin - 1 t. dried oregano - 8 8-inch flour tortillas - 2 T. butter, melted
Directions: In a bowl, combine chicken, salsa or sauce, cheese, onions and seasonings. Spoon 1/3 cup of mixture down the center of each tortilla; fold opposite sides over filling. Roll up from bottom and place seam-side down on an ungreased baking sheet. Brush with melted butter. Bake, uncovered, at 400 degrees for 30 minutes, or until golden, turning halfway through cooking. Garnish with additional cheese and onions; serve with salsa on the side, as desired. Serves 4 to 6.
